Hmmmmm… BBQ Chicken
Sunday was a pretty cool day by any standards. Originally, I had planned to take Ethan and Leah out to dinner at her favorite chinese buffet for our Anniversary, but did that on Saturday instead cause she felt like going that night instead. So for today, I made BBQ Chicken in the Crock Pot. Yeah, when in doubt… Dad breaks out the Crock Pot and hilarty ensues. This was a pretty easy meal to make, which is one of my Dad’s favorite Crock Pot recipes. So here’s the info you need:
Dad’s BBQ Crock Pot Chicken
– 3 lbs of Chicken (Legs & Thighs)
– 2 large onions
– 1 bottle of BBQ Sauce
– Black Pepper
That’s it. Really didn’t need much to make this. What you do with this is you cut both onions in half and use all four halves to cover the bottom of the crock pot. By doing this, the chicken is fully cooked through and doesn’t stick to the bottom of the pot. Then you put one layer of chicken into the pot. At this point I put the thighs in cause you want the to cook through the most. Then you pour half of the BBQ sauce into the pot covering the chicken in already completely. Then what I did was put all the chicken legs on top and cover that in BBQ sauce as well. When it was all said and done, I had two layers of chicken that stood less than an inch from the top of the pot.
It’s wicked stuff. Then you put the pot on (10 hours on low heat, 6 hours on high) and let the stuff cook all day long. I actually used a very cool peppercorn & herbs BBQ sauce and that turned out super awesome. Leah was completely shocked by this. And for the side dish we had tossed salad, which was pretty cool. I also got her a bottle of caffine free Diet Pepsi, which she apprecaited since she hasn’t been able to drink Pepsi for a while.
So we all had a great Anniversary dinner, which turned out all right. I also gave Leah a small gift which also surprised her. I got her a DVD of ‘Shall We Dance’, the Richard Gere/Jennifer Lopez movie. I thought it was really good and knew it was the kind of movie Leah woudl love. Turns out I was right as we watched it that night together after Ethan went to bed. So overall a great day. Hope everyone had a good weekend too!

I’d love it if my husband cooked me a meal. I thought “Shall We Dance” was good too. I did not care much for the Japanese version though.
