tonight’s menu

maple orange cognac glazed grilled salmon over wild rice with a baby spinach and walnut salad topped with a strawberry balsamic reduction / wine paring is a generic Australian Alice White chardonnay / so shoot me / i got lazy tonight…

chef’s notes:

i grilled the salmon in a 30 mph gale at 25 degrees fahrenheit and still nailed it / ever so slightly rare in the middle / i’m good / i added just a hint of habinero to the maple orange cognac / it lent just the right hint of residual heat to the wonderful oily richness of the salmon fillet…

the side was baby spinach / sprouts and walnuts with a strawberry balsamic reduction / worked wonderfully but it needed a little more balsamic acidity to balance the sweet srawberries / a few points off for me but still a keeper…

i need to get off my ass and make Annie a fabulous dessert later / i’m thinking pound cake with espresso liquour and coconut curd topped with a scoop of vanilla frozen yogurt / i’ll let you know how she likes it…

well your menu sounds divine. and i love fruit/citrus with fatty/oily things. OJ after eating bacon for instance. im common like that. i’ll save you a frozen demiglace for when we meet for sushi ok?
