I feel very motivated and…. dreamy today. I’ve got a to-do list, but after that’s done, I think I’ll spend sometime drawing.
I thought I’d come on a post a recipe for you guys. So, I give you, Beef Stroganoff. 🙂
Beef Stroganoff (the real way, not the cheaters way with soup, blech!)
1 – 1 1/2 lb. top sirloin, beef tenderloin, or any other tender, lean cut of beef
1/2 med. size onion, finely diced (or roughly chopped, if you like that)
1/2 lb. (8 oz.) thickly sliced button mushrooms
1 can beef broth
3 tbsp. butter
8 – 16 oz. sour cream (depending on how creamy you want it/how much sauce you want to make)
1. Slice beef very thinly, against the grain and cut into 2 inch long strips.
2. Melt 2 tbsp. butter in large skillet over med. heat.
3. When butter foams, crank the heat up to med. high and add the beef. Quickly brown it on each side (3-4 min. per side). It’s best to work in batches here, so you don’t crowd the pan and you can get a good sear on all the meat.
4. Set meat aside, add the last tbsp. of butter to the pan, and saute the onions over med. heat in the pan drippings. Scrap the fond from the bottom of the pan while the onions cook.
5. When the onions are clear, add the mushrooms (don’t worry, they’ll cook down). Lightly season mushrooms with salt (this will draw out their moisture quickly). Cook 10 min. or until they’ve shrunk significantly and are tender.
6. Once mushrooms are tender, add 1/2 can of beef broth (or more depending on how much sauce you’re making) and turn heat up to med. high again. Allow the mixture to simmer (lots of bubbles) and reduce uncovered for 15-20 min.
7. When the sauce coats the back of a spoon, lower the heat to low, and add the beef back in. Slowly stir in the sour cream and add the extra beef broth (if you need to thin the sauce) until you get the desired consistency.
8. Lightly simmer the mixture to heat through.
9. Serve over warm egg noodles.

Oh, as a note: even if you hate mushrooms, still make it with them. This is coming from a person who hates mushrooms. Trust me, the flavor is just not right if you don’t. Plus they’re big enough to pick out. Just dooooo it.
