Lemon Herbed Chops (Freezer meal)
Pork loin (minus Rib roast end, I save these ends [from a whole case of loins] and cook them all at once to make bbq brisket) chopped into 1/2-1 pieces and divided and put in 3 bags (each bag feeds my family of 10, you can change the amount per bag based on your family’s needs).
Per bag
1/3 cup lemon juice
1/3 cup vegetable oil (I prefer coconut or safflower oil)
2 heaping spoonfuls of garlic
1/2 medium-large onion
1 T dried of your favorite herb(s) (basil, oregano, rosemary, sage, etc…)
Mix all ingredients well, and freeze flat.
On serving day thaw, and cook over medium/low to medium heat until pork is cooked through. Serve over rice, pasta or millet.
Oh, this sounds yummy!! I also prefer the prep of foods for suppers ahead of time, too. Though I live alone now, so I usually make enough at the cooking time, to be able to freeze some left overs for another time! :*) BigHugz.
