The Master Recipe: Boule
This is my fourth attempt at the master recipe (if you haven’t read my previous entry, do so now). I’ve been playing around a little with the flour ratio in attempt to get a higher rise out of the dough. Last night I made the dough stickier than I had previously and then accidentally left it out on the counter overnight (which shouldn’t matter a whole lot from what I can gather from the book). The bread rose higher than it had before, so I must have done something right.
CLEARLY I suck at scoring my dough. lol. I need practice and a sharper knife… or I need to go buy a razor blade.



I’m going to make croque-madames for lunch today. 🙂
