Mini Sage Meatloaves

lovah wanted this recipe so i thought it would share it with everyone!

Mini Sage Meatloaves

1.5 lbs of ground meat (beef, chicken, turkey, pork – whatever you want)
fresh sage
1/2 cup bread crumbs
1/2 cup parm cheese
1 egg

Mix the meat, parm cheese, bread crumbs, egg, salt, pepper, &
chopped sage in a large bowl & mix with your hands. When it’s all
combined, form it into a "blob" in the middle of the bowl, and score it
with your hands in half both ways (forming 4 equal parts). Taking 1/4
of the mixture in your hands at a time, form 4 oval shaped mini-
meatloaves. Put them in a hot skillet with olive oil (sort of rub them
around in the oil a little when you get them in there) and brown both
sides. Then put them on a cookie sheet or in a casserole dish and
bake at 425 for 10-15 minutes or until the meat is cooked through.

Gravy

1-2 cloves garlic
1/2 cup chicken stock
2 Tbsp butter
2 Tbsp flour
3 cups milk
1/3 cup gorgonzola cheese

Mince garlic, and add to the same pan the loaves were browned in.
Then add the chicken stock, and stir around to pick up what the meat
left behind. In a separate pot, melt butter and add flour after butter is
melted. Let the flour cook a little so it tastes lest pasty & more nutty.
Then add the milk while whisking, and season it with salt, pepper,
and nutmeg. Add the cheese while continuing to whisk until it all
melts. Finally, add the chicken stock/garlic/meat drippings to the pot
and stir together. Top meat loaves with the gravy.
