Cutting Gluten

A few months ago I kept having severe stomach pains after I would eat. It was so bad that sometimes I couldn’t sit upright, I had to hunch over from the pain. As this continued to happen, I slowly started to figure out it was happening when I ate “white” flour foods. Since then I have been decreasing my gluten intake, and trying gluten free pasta (like chick pea pasta). It’s not to bad and it fulfills my need for carbs.

Recently, I have expanded to trying cauliflower as a replacement. I haven’t jumped on this bandwagon because I was scared of it quite frankly. So last week I bought some cauliflower rice and made Chicken Fried Cauliflower rice. To my utter surprise I actually like it! I was also surprised by how full the cauliflower rice keeps you.So this week, in my meal prep I have made cauliflower mashed potatoes. I haven’t tried it yet because I’m nervous, but I will this week.

My body feels so much better without the gluten and I definitely know when I have some (I feel sluggish and my body bloats). I can’t always so no to bread, but I’m working on it. Slow steps and discoveries, and one day I’ll hit my goal.
