My latest fav salad
So something that I want to start doing is eating more clean and plant based. This salad is a perfect option for that and it makes multiple servings so it is perfect for those of you who meal prep. Plus is it super easy! All you do it chop up your ingredients to bite size pieces and mix it all up!
What you need:
- 1 cucumberÂ
- 1 red bell pepper
- Cherry tomatoesÂ
- 1 avocadoÂ
- 1 can of chickpeasÂ
- 1 red onionÂ
- Feta cheese
- Juice of 1 lemon
- Splash of olive oil
- Add salt/pepper, garlic powder, and oregano to taste
SUPER easy and SUPER delicious!
